Russ Petrouske is the General Manager for Rare Steakhouse in Madison.
Growing up in northern Wisconsin Russ started in the restaurant business at 14 years old working at a Supper Club (naturally) in his hometown. After attending UW-Superior for Pre-Law/Legal Studies he was drawn back into the restaurant business working as a dining room manager and wine director at high-end steakhouse’s in Florida including Hyde Park Prime Steakhouse and Flemings Prime Steakhouse. Finding himself missing the Midwest, Russ went to work for Coopers Hawk Winery as General Manager where he was awarded “Most Improved Restaurant” and “Restaurant of the Year”.
Most recently Russ worked in food and beverage at Sentry insurance’s award winning Golf campus SentryWorld where he oversaw the opening of “Muse at Sentry” and was awarded Wine Spectator’s “award of excellence” for the wine list.
